To start off your evening we have the very fresh 2015 ‘Controguerra’ Pecorino. Pecorino is an indigenous grape varietal to Abruzzo and has been revived in recent years. It is characterised by high minerality and crisp freshness on the palate, perfect to be enjoyed with shellfish or pasta and fish dishes. This is why our talented Chefs have paired it with a classic Tempura of Calamari and Tuna Tartare Spaghetti to get your taste buds going.

The wine is aged for six months in Slovenian oak giving the wine a nice rounded finish on the palate. It goes extremely well with rich meaty dishes and this is why our Chefs have paired it with a dish packed with flavour. The risotto ‘al Matricana’ is not only a classic Italian dish but is also the dish that will ignite your taste buds.

This wine is an all-rounder and is being beautifully paired with a juicy cut of Beef Tenderloin.
