There is no better way to begin an evening then with Bubbly and Canapes. The chosen one is N.V Nicolas Feuillette Champagne to switch on everyone’s palate.

The next four courses will take us on a journey around the region of Bordeaux. Here we will discover what makes Bordeaux so unique and how wines from different areas in the same region can be so diverse in body and flavour.

We have paired Chef’s Salmon Carpaccio with complementary ingredients, lemon and peach with a beautiful ‘Entre-deux-mers’ literally meaning between-two-seas, which describes its location in Bordeaux, between the Garonne and Dordogne rivers. This is a 100% Sauvignon Blanc, delicate, aromatic and herbaceous. A match made in heaven.

As the evening un-folds we will begin to compare two reds from the two banks of Bordeaux, the protagonists of the evening.

Firstly, start with Chateau Plince, a Bordeaux-blend from the tiny Pomerol sub-region, situated in the right bank and thus Merlot-based. This is an elegant red wine with high acidity and good alcohol content with references of black fruits, violet as well as smoke and earthy aromas. Paired with our Barbary Duck, blackberry compote and smoked vanilla syrup is enough for the mouth-watering effect to begin!

After which we will be uncorking the Chateaux d’Angludet, a left-bank Bordeaux blend, based on Cabernet Sauvignon situated in Margeaux. This is a wine more aggressive on the palate, with ripe tannins and high alcohol showing hints of black fruits, meat, tobacco and oak. This choice is to marry with the strong flavour of lamb and cassis.

‘A fin’, Chef Kevin Bonello has prepared a fruit and honey dessert to complement with our luscious dessert wine from the Sauternes region which undoubtedly needs no introduction. Petit Guiraud, will be showing us a different side to the Sauvignon Blanc variety blended with Semillon and Muscat.
